Life sure is keeping me busy these days with grad school added into the mix. I'm happy to finally get another post in this morning!
Guacamole is one of those wondrous creations that is great on everything. Guacamole may have gotten a bad rap in the past with it's high fat and calorie dense content. However, the truth is avocados are a perfect superfood, they are delicious and nutritious. Avocados are filled with good-for-you fats, fiber, a bit of protein and an anti-inflammatory combination of vitamin C, E, carotenoids, selenium, zinc and phytosterols. Avocados actually assist your body in absorbing more of the nutrients in other foods. So skip the other junk foods that are void of nutrients and enjoy your guacamole! Dip veggies in it, slop it on salads, sandwiches, burgers, eggs, anything!
Too often guacamole is over-done with unnecessary ingredients or bland, without the right flavors.
Here's the six ingredients you need for the perfect guac:
Avocados, tomato, red onion, jalopano, cilantro and coarse sea salt (Organic as much as you can find).
I never measure when I make guacamole. I just chop & dice until it looks like the right proportions. But I'll try to estimate measurements here.
Ingredients:
2 mashed avocados (mash with a fork so there's still some small lumps)
1/3 C chopped tomato
1/4 C diced red onion
1/8 C diced Cilantro
1 T finely diced jalopano (add more if you prefer more spice)
Coarse Sea Salt to taste
Mix it all together and enjoy!
Tip: To prevent your guacamole from browning, save the pits and put them in your guac or add a squirt of lime juice.
Optional ingredients that won't ruin it:
1/2 small lime juiced (Sam prefers this)
1/4 t cayenne or spicy chili powder
black pepper
